I'm BAAACK ... but not over here

Wow, it's almost been a year since I posted something on Pennies In My Pocket. LONG story short, life got in the way of my blogging. I know, the nerve! ha.

If you're interested, you can find me over here: www.6FeetOver.wordpress.com
You'll be able to see what I'm up to now. It's fantastic!! If you're going to leave a comment, leave it over at 6 Feet Over because I'm never on Pennies anymore.

Can't wait to catch up....I'll come by your blogs soon! :)

Let me read my magazine while my slow cooker fixes dinner...

I just found a magazine deal on Amazon. Am I the only one who loves to receive magazines in the mail? It's like Christmas in my mailbox. I know, cheep thrills, but it's true. I've received them as gifts and I gotta tell you, it is the gift that keeps on giving all year long. Thinking I may need to go through the deals here and find some gifts for people...

Red Wine Turkey Thighs

I found this leave-some-wine-for-the-turkey recipe at Gourmet Momma.

INGREDIENTS
2lb-3lb turkey thighs, remove skin and excess fat (you really can use any part of the turkey)
1 cup dry red wine (or 1 cup chicken broth plus 1 Tbsp red-wine vinegar)
1 cup thinly sliced onions
2 tsp minced garlic
1/2 tsp each dried rosemary, sage, thyme and salt
GRAVY: 3 Tbsp flour1/4 cup water

DIRECTIONS
1. Eight to 12 hours before cooking, put all except Gravy ingredients in a 3 1/2-qt or larger slow-cooker. Cover and refrigerate.
2. Cook on high 4 to 5 hours or on low 8 to 10 hours until turkey is tender.
3. Remove turkey thighs to cutting board and cover loosely with foil.
4. Gravy: Set cooker to high and cover. Whisk flour and water until well blended. Whisk into liquid in cooker. Cover and cook, stirring once, 15 minutes or until thickened.
5. To serve: Cut meat in large pieces from both sides of each thigh bone to give you 4 pieces. Arrange on serving plates; spoon on some gravy. Serve remaining gravy from a sauce boat

OK, so my blog posts are fewer lately. I've been trying to get to bed earlier...which is a big struggle for me. Apple Glazed Pork Roast

I found this seriously-so-fabulous-people-will-think-you-spent-all-day-on-it recipe in my crock pot recipe book that came with my slow cooker.

INGREDIENTS
3 - 4 lb pork roast (I always get a 2.5 lb roast)
4 - 6 apples, cored and quartered (I use Fuji because of the sweetness)
1/2 cup apple juice
5 Tablespoons of brown sugar
2 Tablespoons of ground ginger
Salt & Pepper to taste

DIRECTIONS
1. Rub roast with desired amount of salt & pepper.
2. Place apple quarters in bottom of slow cooker, place roast on top.
3. Combine apple juice, brown sugar and ginger then spoon over top of roast, moistening well.
4. Cook on low for 10-12 hours. (My crock pot only takes around 6 hours on low and 4 hours on high.)

This dish is FABULOUS!! I serve with red potatoes and green beans.
