Menu Plan Monday ... a day late

I hope everyone enjoyed their holiday weekend! I did, that's why I didn't post anything yesterday. Gotta love Mondays off with the hubby. :-)

I want to post my Menu Plan Monday even though it's late. I'm doing a repeat from last week. The Cranberry-Chipotle Turkey was REMARKABLE! We had the hubby's parents over for that dinner and they were quite impressed! We're going to invite some friends over this week to partake in this fabulous meal. It was so good, I could have it every week! Super easy, too!



Monday: Spaghetti & Meat Sauce
Tuesday: Chicken in Wine - Crock Pot
Wednesday: Lemony Salmon Fettuccine - from Gourmet Momma
Thursday: Crock Pot- Cranberry-Chipotle Turkey -- I'll post the recipe on Slow Cooking Thursday - This recipe from Gourmet Momma
Friday: Pork Tamales, Spanish Rice, Jalepeno Refried Beans & Tortillas (didn't end up making this last week, so it's on the menu this time around.)

I want to try the turkey also! It sounds really good. My husband would be stunned if I fixed something like that. It's usually boring in my kitchen.

Oooo, I have lots of shredded pork left over from last night's dinner and I would never have thought of using it for Tamales if I hadn't read this. Thanks!
