Slow Cooking Thursday - Sept. 11th

Before I start today's post, I would just like to ask everyone to say a prayer today for the families and friends who lost loved ones in the Sept. 11th attacks. I can't imagine how hard today is for them. I still can't believe it happened sometimes. So, say a prayer and be sure to let your loved ones know how much they mean to you sometime soon. :)


Today's slow cooker recipe is from one of my favorite TV/online websites, The Food Network - LOVE it!

Jambalaya


1 pound boneless skinless chicken breasts, cut into 1-inch cubes
1/2 pound andouille sausage, diced
1 (28-ounce) can diced tomatoes
1 medium onion, chopped
1 green bell pepper, seeded and chopped
1 stalk celery, chopped
1 cup reduced-sodium chicken broth
2 teaspoons dried oregano
2 teaspoons Cajun or Creole seasoning
1 teaspoon hot sauce
2 bay leaves
1/2 teaspoon dried thyme
1 pound frozen peeled and cooked shrimp, thawed
2 cups cooked rice

In a slow cooker, combine chicken, sausage, tomatoes, onion, green pepper, celery, and chicken broth. Stir in oregano, Cajun seasoning, hot sauce, bay leaves, and thyme.

Cover, and cook on LOW for 7 hours (took me 5 1/2 hours) or on HIGH for 3 hours. Stir in the thawed shrimp, cover and cook until the shrimp is heated through, about 5 minutes. Discard bay leaves and spoon mixture over cooked rice.

Funny story...my kids and I were on vacation in Arkansas this summer. We went to dinner and my son was in the mood for soup (strange request for a 12 yr old) but all they had was jambalaya...I warned him he might not like it but wowzer, he ate every bit of it!!

I am loving all the deals I'm finding on your blog! I also am going to copy the Jambalaya recipe. My family loves jambalaya, but I usually make it with the Zatarain's mix and add in chicken, shrimp and andouille sausage. I like the idea of doing it in the crockpot and this recipe doesn't look too hard so I'll have to give it a try. :)

I have had mine for almost 3 weeks and absolutly LOVE it. My hair is naturally curly and super frizzy especially on humid days-I live in the south so we have a lot of

humid days. This iron with the use of Chi silk serum keeps my hair frizz free even on humid days. My hair is really thick too but it only takes me 15 minutes to straighten it. It takes me longer now to blow

dry it than it does to straighten my hair. I will never own another flat iron. This one is AMAZING!!
