Slow Cooking Thursday

So, I'm a huge cooking kick lately. I think it's the fact that I'm all comfy in our new house and I've always liked to cook, but never had a house big enough to have nice sized dinner parties. I've been trying all sorts of recipes lately....and the hubby has been loving it. So far, we've had our family over 2-3 times a week. It's been taking me a while to get the house all 'put together', but as soon as I do get things in their new home I'll throw a nice big dinner party!

I lovvvvvvvvvvvvvvvve my Crock Pot. I've been trying lots of new slow cooker dishes. Right now, I have Chicken a l'Orange slowly cooking away. Mmmmm it smells so good! I was going to have it early this week (see Menu Plan Monday post), but we ended up unexpectedly having dinner at my Aunt's on Tuesday and dinner at the hubby's parent's last night!

Chicken a l'Orange

3 whole chicken breasts, halved
2/3 cup flour
1 teaspoon salt
1 teaspoon nutmeg
1/2 teaspoon cinnamon
Dash pepper
Dash garlic powder
2-3 sweet potatoes, peeled and cut into 1/4 inch slices

1 can (10 3/4 oz.) condescend cream of celery or chicken soup
1 can (4 oz) sliced mushroom, drained
1/2 cup orange juice
1/2 teaspoon grated orange
2 teaspoons brown sugar
3 tablespoons flour
Rinse chicken breasts and pat dry. Combine 2/3 cup flour with salt, nutmeg, cinnamon, pepper, and garlic powder. Thoroughly coat chicken in flour mixture.

Place sweet potato slices in bottom of your slow cooker. Place chicken breasts on top.

Combine soup with remaining ingredients, stir well. Pour soup mixture over chicken breasts. Cover and cook on Low setting for 6-8 hours or on High for 2-4 hours or until chicken and vegetables are tender.

Serve chicken and sauce over hot buttered rice.

6 servings (about 3 1/2 quarts)

I will definitely try this in the fall. I seem to 'crockpot' cook more in the fall and winter. Summer just screams grilling to me!
