Slow Cooking Thursday - Sept 4th


The day I've been waiting for ... Slow Cooking Thursday! Mmmmmm and my favorite slow cooker recipe! I will forever be thankful to the Gourmet Momma for this one...

Cranberry-Chipotle Turkey

1 large onion, thinly sliced
2 turkey thighs (about 2 lb), remove skin and excess fat
1 can (16 oz) of whole cranberry sauce
1/2 cup chipotle marinade

-Put onions on bottom of crockpot, then add the turkey on top.
-Stir in 1/2 cup of cranberry sauce and 1/4 cup chipolte marinade in a bowl until blended. Spoon over turkey to coat.
-Cover and cook on low for 8-10 hours or until turkey is tender. It only took 6 hours for me.
-Remove turkey and cut large pieces.
-Remove onion from slow cooker with slotted spoon. Discard liquid left in cooker. Microwave remaining cranberry sauce an d marinade (1/4 cup) for about 2-3 minutes until melted. Stir in onion and spoon over turkey.

I served this dish with stuffing, green beans (onions, bacon a green beans with season salt) and biscuits. FABulous!!! Super easy and beyond delicious! By far my favorite slow cooker recipe!
