So, I somewhat forgot that even had a blog. The child and I got sick (again) for almost two weeks and then my brain goes to la la land. I became lazy and forgot my bargain shopping duties. How rude. I do apologize. I'm back now.

A long Sunday nap starts the week off right....and Menu Plan Monday

What is it about Sunday afternoons? Around 1pm sleep just hits me like a ton of bricks and if I don't take a nap, well, it's going to be a bad week. Usually, a one hour nap does it (during Pumpkin Doodles' nap), but this time I took a 3 1/2 hour nap and if it weren't for my husband egging the baby on to wake me up, I'm sure I would have slept until morning.

Ahhhhh I love naps. This is going to be a good week.

Can I add this to my resume... (oh and Slow Cooking Thursday, too)

...multi-tasker. OR at least I like to think that what I'm doing could be classified as such.

Right now I'm facebooking, looking for a facebook addicts support group via google, writing this blog post, watching Craig Ferguson, watching Emeril Live, eating Skittles (my tongue is still raw from them yesterday), responding to emails from hilarious friends, doing laundry (well, the washer is really 'doing' the laundry at this very moment), searching Amazon for some fab deals, browsin' the web for other fab deals....

Does *thinking* about putting away the clean dishes count? If it does, I'm going to add that to the list and eating chips...I'm thinking about switching from Skittles to Lays chips right now.

Seriously, what is up with my junk food cravings lately. Uggghhh

Of course, the hubby and baby are knocked out cold in bed. I wonder if I'll ever out grow this night owl phase.

Vegan (or not) Slow Cooker Potato Soup


I found this yummy makes-you-feel-good recipe at geekypoet.wordpress.com...

I am making this with whole milk (because I'm not a Vegan).
Another variation is to use sweet potatoes instead of regular potatoes, and use apple juice instead of broth.

4 Russet Potatoes (or equivalent of other kind of potato)
2 cups veggie broth (I use chicken broth)
1 clove garlic, minced
1 spring fresh rosemary, whole (remove stem before serving)
1 cup unsweetened almond milk (or unsweetened soy or rice milk or if you're like me whole milk)
salt and pepper
*I add chopped celery and parsley*

Peel the potatoes and cut into medium sized cubes. Place potato and broth into slow cooker and set on low. Add rosemary, 1 tsp salt, and fresh ground pepper. If the potatoes aren’t covered by the broth add a little more.

Cook all day on low (6 - 10 hours). Use an immersion blender to puree everything. You can also use a blender, but make sure not to fill it all the way or you’ll have a hot mess on your hands!

Add milk and puree some more. Taste and adjust salt and pepper. Serve topped with fresh chopped thyme and chives.

*I grade monterey jack cheese and sprinkle it on top.*
